Sorry, you didn’t think I actually had a remedy for that did you?! Well, I don’t. Nope. Nada. Unless you count chocolate, or running (and that latter is my personal UN-favorite of the two). I think this is why I had never wanted to start blogging, I feel guilty when I don’t post and then I don’t post ‘cuz I feel guilty, its a vicious cycle really! Sometimes I don’t post either because I can’t even begin to put down on paper (or internet or whatever) what has been going on in my head. I keep saying this "eat whats best when you can" thing is how I roll, which it is, but it leaves lots of time each day for me to fill with the <i>not</i> so healthy too.<br />

And quite frankly, I still find that there is SO much out there when it comes to some new scientific study or new food philosophy that not only can I <i>NOT</i> keep up, but don’t care to! And then I feel guilty for that too. I mean, who the heck writes a food blog on healthy eating and then goes on strike because they don’t really <i>want</i> to make the changes? Maybe its because the more I read and find out, the more I realize I don’t even begin to know. Maybe its just that I don’t really <i>want </i>to do the work, haven’t I made enough changes?! Ha! Is there ever enough? Maybe its a little splash too of, "yeah forget that junk‘cuz when I go to Italy ain’t no way I am going to deny myself new taste experiences because I forgot to eat my spinach today. <i>(Yes that is the way I talk, anybody who knows me can vouch for that! This whole senario may be a little hypothetical into the future, but we eat all kinds of different foods here on a regular basis and some may not be in the Mucos-less diet definition of super nutrient and enzyme rich ingredients, but they sure taste great and give my kids more to explore, by way of palate that is!)</i> I also find that between the daily drama that seems to unfold and cramming dinner into a 1hr start to finish block including chores, cleanup, and bedtime routine if I can swing it, I am plum out of energy to go on some flashback discourse of my not so glamourous life! I still can’t get the image out of my head today of my youngest screaming in the kitchen because I was gone for 10 sec. and he managed to empty the recycle bin <i><b>and</b></i> get right to the pineapple can (all the way at the bottom of the bin mind you) and serrate his two fingers, complete with a nice little bloody pineapple juice puddle to make the memory that much more lasting! Not to mention that literally 2 min later I had to go in for major surgery because the 3 yr. old thought it was funny to drive his moving Percy train in his hair and it got stuck... (he’s the one with all the curls, imagine that!) And this wasn’t including the "out the door antics" that nearly made us late for the 2nd day in a row trying to get back to school schedules down. Oh yeah, and where do I even <i>begin</i> to write about my adventures in food storage and couponing to the point that I either want to cry for joy over that whole 36$ saved at the checkout counter in the commissary on base, or cry for shear exhaustion from the 2 stupid hours it took to <i>actually accomplish</i> that, plus all the clean ups on aisle 3 that were unceasing since my little man can sweep a whole shelf clean in under 2.2 seconds. Yep. A food blog seems to be the understatement of the century right now! Ah well. Maybe I should re-vamp my main goals here; It’s not about the <i>end</i> result, but the journey through life that I am living vicariously through food!</div>

You bet. It’s Bragg’s Liquid Aminos. And yes, it really does replace soy sauce and is SUPER delicious and nutrient packed. The word on the street is your kids will love it too. At least mine did. Check out my Spinach Chicken Pasta recipe and replace the soy sauce with this. My kids ate the noodles like nobody’s business, and even tore up the veggies! Trust me, this is a summer meal you won’t regret... let alone forget! Amazon.com has some reasonable prices, 5 and 1/2 bucks for a 32 oz bottle is a killer deal when you can use this to make everything from soups and salad dressings to, you guessed it, Spinach and Chicken Pasta Salad!</div>

Not only are they only $5 or so each, but they come in a mondo super big size... the kind that I justify buying because I have 4 kids now but secretly it is just for me, all just for me! Muahahaha! I think I quote movies too much. Or I think in quotes. Or something weird like that. My first thought as I was going to relay this past few weeks “in a nutshell” to you was the one Austin Powers gives all curled up on his bed yelling, “This is me in a nutshell, help help! How did I get into this nutshell?!” I know. Strange. But I really feel like I am quite literally <i>IN</i> a nutshell to. I will spare your interest as to <i>What</i> type of nutshell it actually is!<br />
So life is cruising along. I am all over the board constantly with eating healthy. I love it. My family doesn’t so much. Neither does my schedule, as in, I do not always have time to make vegetarian lasagna from scratch kids. Sometimes not even a super nutritious breakfast, we’re talking cheerios baby. (I am pretty sure it qualifies as healthy in this day and age right?) All depends I guess on who you talk to. I am very split between mostly veg, and this newer mindframe of “heck yeah animal fat! (so long as it’s grass fed!)” Which p.s. isn’t cheap either. Are these healthy doctors in bed with the supermarkets and quick food industry or what?! Ugh. On a lighter note, I still love food each and every day, so thats good. Kids are crazy as ever, but it is summer, no excuse for not blogging right? Plus I really need to hone in on my writing skills, as I have FINALLY decided on a major. PERMANENTLY! (Hold on to your seats! Anyone who knows me will realize this is an amazing feat. If not a miracle. It’s only changed 312 times in the last need I say how many years since I graduated?!)<br />
English. With a creative writing emphasis and art history minor. That way I can teach if necessary and write when desired. More on that later. AND, I begin Yoga teacher training in August! I am SO uber excited. Thanks hubs for going back to school so I can too! At this rate, I just may graduate with my kids! HA!<br />
So, my littlest is trying to walk (yeah he is only 8 mos old) and the boys are crazy as ever, and then here is me saying this is not quite all of them, I wonder when we should have another! Agh! In all seriousness, I love being busy, so why not?! On an even more important note, I am actually <i>cooking</i> one of my new favorite recipes AS I WRITE, so what a fitting time to blog all about it? I got this recipe from a fabulous gal out in St. George, UT at a Bosch cooking class of all places, and with her permission I am sharing it will all you lovely folks! It is sooo easy, refrigerates great, and is meatless, effortless, <i><b>not</b></i> tasteless, and.. um... money-less (cheap!), low fatless, and virtually potless! No wonder I love it!<br />
<br />
<i><b><span class="Apple-style-span" style="font-size: large;"><span class="Apple-style-span" style="color: #38761d;"> Penne With Broccoli and White Beans</span></span></b></i><br />

3 bunches broccoli (about 4 c)<br />
1/3 c extra virgin olive oil + 1 tbsp<br />
3/4 pound (350g) whole wheat penne pasta (I just use the 13.25 oz box)<br />
1 tsp crushed red pepper flakes (opt)<br />
1 tsp fresh ground black pepper<br />
8 cloves garlic, peeled and minced (that pre minced garlic is GREAT too!)<br />
2 tbsp fresh oregano (or 1 tbsp dried if needed)<br />
2 15 oz cans cannellini or other white beans, drained<br />
4 oz crumbled feta cheese<br />
<br />
Bring a large pot of slightly salted water to boil, adding a drop of olive oil to keep pasta from sticking. Once boiling, add pasta and set timer for 8-10 min. Rinse broccoli and cut florets off. When pasta has 3 min left, add broccoli to pot with the pasta and keep cooking. Drain pasta/broccoli and set aside. In the pot used for the pasta, heat the 1/3 oil, 1/2 tsp salt, red pepper flakes, pepper, oregano and garlic stirring constantly for about 2 minutes. Add the beans, pasta and broccoli, stir. Reduce heat to low simmer for about 2 min. As I contemplate the proceedings of this day, I realize that I just may not survive 4 boys for the next 18+ years until they are gone. I am pretty sure that I am not only a “soccer mom”, but literally the referee too. The coach, the boss, the warden, peacekeeper (at least the attempt thereof) and not to sound redundant, but the nurse, headwife, and as Milly from 7 Brides for 7 Brothers so eloquently stated, “Your cook n’ clean”! Yup. A mom’s work is never done. (Shout out to all you mom’s out there, future mom’s, wannabes or non-wannabes, you “perhaps someday in my future when the car is paid off” and even the “Um, not sure” types. Or how ‘bout that knee slapper of a joke “Okay get down from the table now that you have officially turned it into what better resembles a feeding trough and spit out every attempted bite of painstakingly homemade tamale pie.” Oh wait, I’ve got another good one! Like the ever classic, “Go down to the basement to run around and get your wiggles out before a fun-filled family activity” (it is our monday family activity night after all) and not even 10 minutes later to I hear the cries again of that poor little not-so innocent 3 year old trudging up the stairs, totally soaked (dripping even) because his brothers found that spitting water from the water fountain all over the downstairs and each other was far more fun than an actual project, not to mention the early bedtime to boot. Yup, I am a hoot! All this was accomplished with so many giggles and silly shared grins that who could wonder at the early bedtime, canceled activity time, and the total and utter disbelief that I may not make it to the end of this? Maybe Billy Cosby was right, I’m pretty sure I heard my kids saying “Dear little man, you do not understand, we cannot go to bed unless we’ve had our beatings!” All in a days work might I add, all in a days work. And if any of you were wondering about the tamale pie? Hi friends! Long time no see. Or talk. Or share. Whatever! So, we have been out of town twice in the last two weeks, the hubs has been gone and back, and I am happy as clam to be home doing nothing but little bits of yard work, <i>NOT</i> taking care of <i>ANY</i> puppies (we decided to sell them all), eating food, and <i>NOT</i> worrying about everything I put into my mouth. Why is this? Where is my new found wisdom to once <i>AGAIN</i> reduce (my time spent) reuse (whatever I have in my fridge) and recycle? Okay, recycle might not really apply, (other than to recycle the packaging I pull food out of) but hey. Experience. And demand, as in, my life demands I cut the extra work and stick to the basics! This last month has just taught me that there are a million and one new foods or ways to eat them out there, and as much as I enjoy learning about each one of them and finding new exciting ways myself to utilize them, I am severely lacking in time let alone creativity. My list of 5 basics? (and this is coming a LONG way baby from where I was 1 year ago)<br />
1. Pure; eat as pure and clean as you can get. Water, bread, boxed foods, whatever. Try to keep them as much to their original form as possible<br />
2. Less; eat as little meat in a week as I can. Nothing specifically wrong with it, it all just depends on what you read of course. Personally I feel better when I eat less, and I spend less too! skip meat at lunchtimes, go for the organic once a week if you can, and EAT MORE BEANS!<br />
3. Even less; Dairy, watch it if you can. Stick with hormone free, organic where you can, mostly un processed etc. (pure butter, basic simple cheese once in a while, that kind of thing) Also less money, less hormones etc, and of course less fats and such. I don’t worry about this as much with my kids but I just try to get back to more of the other good stuff and less of the animal fats.<br />
4. SMOOTHIE! yup, I am convinced that a raw veggie/fruit smoothie a day keeps the Dr. away.<br />
5. Sweat; as in don’t sweat it. Even the pediatricians are now telling moms not to worry so much about what your child gets everyday, <b><span class="Apple-style-span" style="font-size: large;">but what they get every </span></b><i><b><span class="Apple-style-span" style="font-size: large;">FEW</span></b></i><b><span class="Apple-style-span" style="font-size: large;"> days</span></b>. So today might be out the window, but tomorrow we’re going for gold!<br />

Now that I have once<i> again</i> preached to the choir, I must add another quick reference as to why. As in, my frame of mind when deciding to spout food nonsense again. It is because I have found everyday brings so much, and so much that is new and great, I cannot stress about things anymore. Not that I did that much to begin with, but it just isn’t worth it to me to slave over a bean and rice lentil casserole thing with hidden veggies painstakingly chopped as fine as I could muster the time and attention to incorporate, all for a few bites, obnoxious gagging motions and at times even tears later. Kids will get used to it if is a <i>lifetime </i>of change, and I teach them <i>moderation</i> while they enjoy life too! I’d like to think a cheeseburger really was invented for a reason, and that our tastebuds should get their own opportunity to enjoy food without guilt. So maybe you will only hear from me once in a great while when I share my newest find and fav, some is still better then none! <i><b><span class="Apple-style-span" style="font-size: large;">And we can all go on living our great lives of accomplishment, with a little side dish of nutritious-ness to boot. </span> </b></i><br />

<b><i>This recipe is from a friend I just made out here, I added to it of course, but I SO love this for the ease, the different ways to serve it, and that it totally qualifies as one of those yummy meals you can make at the beginning of the week and eat as fab healthy leftovers throughout the week with out much work.</i></b><br />

<b><i><span class="Apple-style-span" style="font-size: large;">Spinach and Chicken Pasta Salad</span></i></b><br />
<b><i><span class="Apple-style-span" style="font-size: large;"><br /></span></i></b><br />
Sauce;<br />
1/2 c sugar<br />
3/4 c soy sauce<br />
1-2 Tbsp dried chili flakes<br />
2 Tbsp sesame seeds<br />
1/8 tsp allspice<br />
1/4 c rice wine vinegar<br />
1/2 c canola oil<br />
3 Tbsp sesame oil<br />
<br />
Whisk til completely emulsified. I actually soaked the chicken breast in a few tablespoons of this, then sauteed the chicken up.<br />
<br />
1 lb angel hair pasta cooked and rinsed<br />
1 lb chicken breast (I used WAY less, as in maybe 1 large breast) cooked up and chunked<br />
<br />
Toss all above with the sauce. Serve with chopped fresh spinach, matchstick carrots and bean sprouts (all in convenient bags in the store!) Keep the fresh ingredients separate so you can pull it out and throw it together anytime during the week.<br />
<i><b>For a tasty and hot mid-week lunch idea</b></i>, add 1 Tbsp of peanut butter to the noodles and give them a quick zap in the microwave to heat. Then stir it all up good and add more fresh veg for the the top. Makes kind of a quick Thai noodle thing.<br />

I love Kale. I know, I am pretty sure I have said that before. Know why? Great smoothies. Versatile green, grows in the cold (not that I have done it yet, but I hear that is a plus) and tastes super yum too.<br />
This recipe was in <b><i>Jan/Feb 2011 Vegetarian Times Magazine </i></b>(I tried to find it online, but no luck) So I of course give all the credit to the Mag, but I really wanted to share it as it is SO my new all-time favorite Vegan quick and delicious recipe. Oh, and by the way, the hubs is home, the puppies are sold, and life is slowly returning to normal. My tip of the day/week/year? Prepare your kids before taking them out to Indian Food. We thought it was a fun change, we had been there before, but apparently they could only remember chicken nuggets and ketchup and that is sooo mortifying when you are out for delicious ethnic cuisine and they pester the waiter for such heathen kid food. Oops.<br />
<br />
<i><b><span class="Apple-style-span" style="font-size: x-large;">Rice and Chickpea Kale Rolls with Pineapple Salsa</span></b></i><br />
<br />
<i><b><span class="Apple-style-span" style="font-size: large;">Kale Rolls</span></b></i><br />
1 tsp olive oil<br />
1/2 c finely chopped onion<br />
1 c cooked chickpeas (the can was SO great for this)<br />
3/4 cup low sodium vegetable broth (seriously, chicken was fine)<br />
1/2 c white basmati rice (leftover already cooked rice was fab here)<br />
1 tsp cumin<br />
1/2 tsp paprika<br />
1/4 tsp salt<br />
12 large Lacinato Kale leaves (p.s. what the heck is that? I just grabbed what was at the store)<br />

<i><b><span class="Apple-style-span" style="font-size: large;">Salsa</span></b></i><br />
1 20 oz can crushed pineapple<br />
1/2 c chopped red bell pepper<br />
1/2 c fresh mint or cilantro leaves chopped (cilantro rocks)<br />
1 jalepeno seeded and chopped<br />
1 tbsp grated lime zest<br />
1 tbsp fresh lime juice<br />
1 tsp agave nectar or sugar if none on hand<br />

To make Kale rolls, heat oil in a small saucepan over medium heat. Add onion and cook 3-5 min till soft. Add chickpeas, broth, rice, cumin, paprika and salt. (If you are using already cooked rice which is SUPER fast, just reduce the amount of broth and mix all together) Bring to boil, cover reduce heat to med-low and simmer 15 min till all liquid absorbed.<br />
Trim stems from center of kale leaves, place 1 large or 2 small overlapping kale leaves on work surface with tip away from you. Pull together cut edges where stem was removed to overlap. Spoon 2 tbsp chickpea mixture in center of bottom of leaf. Fold sides and roll up leaf to tip. Repeat with remainder. (p.s. again, I just did whatever worked and used however much filling I wanted. Do what works for you!)<br />
To make salsa, stir together all ingredients in a bowl. Season with salt and pepper if desired. Top kale rolls with salsa.<br />
<br />
Makes great easy lunches, just pre-make salsa and grab and go! For dinner if kids aren’t diggin’ kale, stuff filling in tortilla shells and serve with the salsa on the side or with chips. Trust me on this one. I have first hand experience, daily! For all who are interested, I am currently running a household of 4 sons, an in and out sister, 7 dogs, and an absent husband... (well at least for the next 2 weeks). So life gets crazy. My little chi had puppies 5 weeks ago, 6 of them. And let me tell you, the similarities are <b><i>scary</i></b>. Potty cleanup is constant. The second these little guys wake up or walk out of their kennel, or eat for that matter they have to go to the bathroom! Sounds a lot like my dinner table. “Oh mom did you call me?” or “Oh mom, was I supposed to eat <i>now</i>? <i>And</i> sit still <i>and</i> have manners? <i>And</i> not talk, laugh, giggle, or reenact any number or variety of body functions?” “Oh, you mean I have to <i>stay</i> at the table to eat? Isn’t ‘Come to Dinner’ synonymous with ‘Time to go Potty’?” <i><b><span class="Apple-style-span" style="font-size: large;">Yeah the list goes on. </span></b></i><br />
Or how about this, maybe some of you can relate? Gary is super handy right now, because lets just say we are getting good use out of him. Between puppies who can’t quite chew food and little boys who don’t like chunky soup, chili, or veggies, I get Gary’s help in pulverizing the life out of their little mini meals and smoothies. The pups like it, and so do the kids. Comes in handy too with food prep engagement... A necessary evil when dinner is running late and your 4 year old is still wailing about how the almost 3 year old chased him down the hall <i>again</i> with a butterknife. Oh, and let’s not forget the nightly ritual of “Mom, I am <i><b>SO</b></i> hungry, when is dinner going to be done?” Also sounds like my pups... Only one boy dog (thank heavens) but all he does is pounce all day on the other 5 sweet little girls. I bet you can hear the shrieks down the street, they sure are beginning to wake me at night! <i><b>Today however,</b></i> the joys have far out weighed the work. The puppies were a blast in the kitchen as they ran amok looking for anything fun to chew or pee on, and the boys simply loved every minute of it. They just sat on the floor in puppy love-land! I am even getting some help with kennel cleaning and feeding time (something which occupies both the puppies, and my boys!) And most importantly, after a fun filled evening of popcorn and a movie, I got to hear those ever satisfying words of <span class="Apple-style-span" style="font-size: large;"><b><i>“I love you mom, you’re the best!” </i></b></span><br />

Or maybe it was the thrift store finds that so elegantly drape my post 4 children mommy body. Hmmm? Was it that? Or do I just have that fabulous “She is obviously into nutrition, she must make her own Kefir” glow right? </span></span><br />

The basic concept of Kefir is that it is somewhat glorified yogurt. I have some Kefir “grains” that I store covered in milk, in a jar, in my fridge resting until I give them a good rinse and place them in another larger jar, cover again with the desired amount of milk, and let sit for the required period of time to essentially</span><i><b><span class="Apple-style-span" style="font-size: large;"> grow</span></b></i><span class="Apple-style-span" style="font-size: large;"> and </span><i><b><span class="Apple-style-span" style="font-size: large;">ferment</span></b></i><span class="Apple-style-span" style="font-size: large;"> my own culture of sorts. This fun new little food was all courtesy of my mother in law, (who should honestly have the food blog as I get all kinds of healthy food stuff from her) but hey! It tastes much like yogurt/buttermilk but I personally just can’t handle much dairy to begin with. I recently in fact have sort of rediscovered how sensitive I am to lactose. Interestingly, although Kefir is often cultured in milk, it becomes much easier to digest as the milk proteins are broken down, and I can still handle it. Good to know right? </span></span></div>

The only problem is, as much as this <i>fantastic</i> book is for beginners, I think I still need the extra dumbified version for those who still have no idea what “heading” a plant is, or even some of the supposed simpler stuff... like comprehending how one even grows certain plants inches apart of each other...in a certain way...on a certain day...when the moon is just perfectly aligned with the known hemisphere and the correct zone within the country you are in leads to ideal temperatures for... <i><b><span class="Apple-style-span" style="font-size: large;">What?! </span></b></i>I don’t even know! (Hey guys! I found this draft in my postings and thought I would finish it. This was after I was sick <i>AGAIN</i> after my youngest so far was born, this time with bronchitis and the flu. I think it was my “Motivation Proclamation” of sorts. Whatever it was, I decided to add a few Resolutions. Maybe some of you have felt this way before?! <b><i><span class="Apple-style-span" style="font-size: large;">Welcome to a New Year Right?!</span></i></b>)<br />
<br />
<b><i><span class="Apple-style-span" style="font-size: large;"> W</span></i></b>ith the New Year having swiftly arrived and consequently up-rooting all my best laid plans for delicious holiday postings and anecdotes, I am starting afresh. Forget that for the last week and a half we have survived on breakfast cereal, ramen, and drink mix powder for extra vitamin c (and convenience). Set aside the fact that even with an exciting new kitchen appliance, the concept of using it regularly still seems to evade me and my floors are no better off than they were before the arrival of such a fancy doohickey steamer cleaner contraption... (which is now beginning to gather dust in the corner). And let’s not even go anywhere near discussing the lack of new and innovative (and perhaps I should also add “healthier”) family dinners I am normally so inclined to make. If I told you what was in my cupboards right now I am sure you would be shocked and appalled. That, or you would just smile, nod, and get that faraway look in your eye as you recall all the luscious delicacies (and maybe a few in-decentcies!) <i>you</i> enjoyed over the holidays and how some of those yummy morsels may still yet remain in your own pantry with closer inspection. Call this “The Allegory and the Oddity”; a little slice of <i>my</i> life, briefly illustrating where continuous and somewhat monotonous daily occurrences have left me feeling that somewhere I have need for predictable reform and that with a few feverish long winded run-on sentences, a feeble attempt to reclaim some of what was lost in last years hulabaloo can be redeemed. <br />
<i><b><span class="Apple-style-span" style="font-size: large;">W</span></b>ell, just</i> <i><b><span class="Apple-style-span" style="font-size: large;">maybe</span></b></i>.<br />
<br />
~ Kids are only young once, a popsicle in the middle of the day <i>never hurt nobody</i> (as long as it is an all natural fruit pop made without red40 and high fructose corn syrup)<br />
~ Breakfast cereal w/milk, and juice to drink sometimes <i>DO</i> constitute a well balanced dinner, and I will <i>not</i> get on myself if that happens every so often<br />
~ Going out to dinner is <i>NOT</i> a sin. Unless it’s Taco Bell. Enough said.<br />
~ Although bathrooms do not clean themselves, kids <i>CAN</i> learn to help with them, and I will not stress about a little pee on the seat with 4 boys living at home. And a dad. And I will not stress about it. I will not. I will not. I will not. (3 times is the charm by the way!)<br />
~ Some food really <i>IS</i> yummy-er with oil. And butter. Mmmmm. (I will still include recipes with grapeseed oil and coconut oil and all the latest new health raves I promise, but butter really just does work sometimes, and hey, kids need the fat for growing brains right? Right?!)<br />
~ Pajamas are still ok before noon. Maybe for those of you out there without children, you still do this. I don’t know how all of a sudden it’s some kind of “No-NO” considering even <i>before</i> kids I would laze around in them and didn’t feel self conscience, but I won’t let it get to me any more, after all I have a baby still! And no, I am not talking myself into this!<br />
~ I will try <i>ONE</i> new food every month. That may not sound like much, but honestly I have tasted much of what is out there, so I am going to have to get creative on this one, and go out of my comfort zone!<br />
~ I will teach each one of my boys this year how to make <i>ONE</i> food from start to finish. I really don’t want to have that boy... who grows up to be a man... who can’t find the toaster. Even if it is just toast for the 3 year old. We can do it, and I will include them on my adventure.<br />
~ Smoothies <i>ROCK</i>. All those lovely veggie, kale, green ones I have talked about? Yea. Won’t live without ‘em now!<br />
~ Peace in the world starts at home. Cliche? Perhaps. But one small step for a family will affect generations to come, and all those around them too. I want to find Peace this year, amidst all the financial, political, social, economical, and <i>YES</i> even <i>eating</i> trouble out there. And offer a little humor and fun while I do.<br />

Life <i>can</i> be sweet and simple...even in the winter! I haven’t much to say, life has been too crazy and I hate to repeat out loud some of the thoughts and inner wars over just about everything, from sleep, to eating, to rinse and repeat, I am fresh out of words. At least for today!<br />
On an exciting note though, my little chihuahua just had her first litter, (6 of the 7 made it, and 5 of them are girls, so we are super happy and grateful!) and I have decided there is much to celebrate. This is a delicious recipe I enjoyed at a restaurant and since I couldn’t <i>go</i> out to eat it, I thought I would try to duplicate it myself at home. I love how quickly it can come together, and yet how complex some of the flavors intertwine. Coat beets in olive oil and salt, place in a baking dish sprayed with non-stick cooking spray. Place in a pre-heated oven at 400^ convection or 425^ regular and bake for about 30 min. While baking, make sure salad and arugala is washed and ready. Put crushed walnuts, butter, and maple syrup in a microwave safe bowl and cook for 2 min, checking and stirring after 1 min and then every 30 sec. Microwave longer if not roasted to your liking, just be sure to stir probably every 20 sec instead...(nuts brown super fast at this point) Make honey balsamic dressing. Once beets are done, peel and cut into 1 1/2 to 2 inch chunks. Put salad together on a long plate with greens on bottom, and all other ingredients sprinkled throughout. Drizzle desired amount of dressing on top, and viole!</span><br />

Let set for 10 min or so. Serve with homemade whip cream or vanilla ice cream. </span><br />

Sad but true that it has been so long since I have recorded the chaos/life experiences/joys of cooking for all of you to glean from. And so much has happened too! We had our first crop of peaches this year, and I got the pleasure of staying on my feet for 3+ hours learning to can at my uncle’s house (who by the way lives within 5 miles from me, maybe this is something standard for the rest of the world but for ME, never in my life have I lived so close to family). Anyway, I was still pregnant at the time and hoping very much that the hard work would in fact “work” on expelling my little attachment, but to no avail.<br />
SO the peaches were not only delicious, but quite abundant as we had close to 35 bottles of jam and 15+ large bottles of actual peaches. Amazing and quite satisfying as I filled the pantry once the job was completed. Within a few short days, we had a family come to live with us (my counterpart actually to this blog, but between the two of us she has been so busy as well she hasn’t been on yet!) She made good use of our basement for 6+ weeks with her three little boys, and let me tell you life was a joy and complete chaos all rolled into one! Once she was here and settled, my mother in law came out and I proceeded to try just about everything under the sun to see if we could have this little baby, as I was dying to find out who and what it was. Well lets just say about 3 false labors, tons of primrose oil, walks, and yes the dreaded castor oil later, I was in labor!<br />
The long and short of it...about 8 hours of walking and moaning (and crying) later, we were the proud parents of boy #4! Yes! Eli Michael joined our ranks (all naturally might I add, meaning no drugs at least until <i>after </i>the delivery!) and we are so very happy to have him here. The boys have taken to him like he should have been and <i>was</i> in fact here the whole time! We love it, and have loved the weeks with our dear friends before they moved on to Washington. I will soon be adding pictures of the 7 of them (all 5 up to the counter at meal times) so that you can get a glimpse into what life was like around here for that time! We loved it, and we were grateful for the help during a crazy run in with a contractor that did not finish his work (whom we will now have to sue for running out on our job only half way through it and 3 weeks over due) on our house. So, needless to say, life I<i>S</i> peachy. That’s right! Don’t let it intimidate you either! At approx. half the calories and fat for just the regular goat cheese too (try 80 calories and 5 g fat per 1 oz. vs. 80 FAT calories and 9-10 g fat per 1 oz. of oh so yummy cheddar cheese) this is quite a delicious treat to add flavor variety to all sorts of dishes. Today’s special? Farmer’s Market tomatoes served up Caprese style. At least that was what they called it in the restaurant, so I will make my version the with the same name too. Ultimate fav about this one? Not only is it so rediculously easy, but a major crowd pleaser, can double as just a side dish vs. appetizer, AND it tastes GREAT too. Check out the bottom for another quick summer lovin’ but no oven “dish” perfect from those extra summer peaches you may not know what to do with too...<br />

1 large heirloom tomato<br />
2-3 sprigs basil, torn<br />
1-2 tbsp goat cheese crumbles<br />
5-8 pitted Kalamata olives<br />
olive oil, balsamic vinegar and salt and pepper for drizzling<br />

Slice the tomatoes and arrange on a platter, sprinkle torn basil, goat cheese crumbles, and olives. Drizzle olive oil, vinegar and salt and pepper and POOF, you are DONE!<br />

Grilled Peaches<br />

2-4 peaches sliced in half and pitted<br />
olive oil<br />
balsamic vinegar if desired<br />
<br />
Rub the peaches in oil, grill on a hot BBQ for 3-5 min. per side (make sure not to char ;o)<br />
Serve with an extra splash of balsamic if desired.<br />
PERFECT for a BBQ dinner one night, or as dessert with a little beat of cheese or cream to end an oh so good meal.<br />

Spicy, zippy, sweet, colorful, and the perfect blend of what really makes a dish de-lish. It can even totally pull off a summer or a winter dinner fix. I got the idea from the restaurant Claim Jumpers that I used to go to in Vegas with the hubs back when we had more money and were trying to wooo (sp?) each other. Then I found a version I liked on the internet, and altered it to my specs. Basically it is a baked sweet potato slathered in a sort of jamaican style jerk seasoned chicken and topped with some super yum mango salsa and a little drizzle of honey. You bet your boots it is too good to be true. And for all of you that just may be bored with what else to do for dinner, this one def. qualifies as a winner, and super easy meal that is even kid friendly (we just skip the spicy salsa and viola!)<br />

Why? Because I am constantly reminded of the importance of these two little verbs in my life. The hubs was supposed to leave for a month of training yesterday (yeah I am due in less than 6 weeks) but due to some unforeseen events (he didn’t pass a test first) he will be delayed in attending this particular class. Good to be home for the next few weeks, but def. some re-adjusting to be done! <br />

And then there are my kiddos. As much as health is an important part of my life, so is sanity. And finances! Most of us can’t afford hundreds of dollars a week on organic snacks or all natural soaps, cleaners, and other products, and even much organic produce for that matter...(well maybe you can, but I know that I can’t!) SO, the point of all this contemplative reflection is this. What is most important to<i> you</i>? Where can <i>you</i> afford to make some allowances, and where is it that you just <i>cannot </i>budge? This is my motto for each day. I approach everything from what needs to be done around the house, to what I can squeeze in by way of activities to what we are going to eat for lunch. This is my recipe for mental health. We eat as clean (meaning little to NO preservatives, corn syrup, MSG that sort of thing) and as simple as possible. So what if I may not be able to buy perfectly fun and delicious snacks all the time. If I have fresh fruit and hormone free all natural milk around, there are at least 10 different things I can provide my kids with that is nutritious (and yummy too!) So what if my floors are not always sparkling and shiny, my kitchen and dishes most of the time will be! Maybe laundry isn’t always put away, but it <i>is</i> washed regularly and you can find clean clothes in any number of places if you look hard enough. I do try to keep things clutter free though, and leave my living room and family areas warm and inviting. It is all about what works for you, what is best for you, and then don’t worry about anything else!<br />

Seriously though, when my mother in law tried this little trick on me, I not only thought she was joking but turned up my nose. To my pleasant surprise she was right about getting some super green veggies in a shake, and I even learned a thing or two (after experimenting with new versions of super green smoothies all week) about how to make just about any combo of fruit and vegg taste good when pureed together to form some little punch of compact nutrition. One Version of the Super Green Shake<br />
<br />
1 1/2-2 c leftover green salad from dinner (yes, cucumbers, tomatoes, even a little red onion doesn’t hurt!)<br />
1 banana<br />
1 apple (pear is a sweet substitute too!)<br />
large handful any variety frozen fruit (my current fave is Costco’s smoothie mix complete with peaches, strawberries, melon and blueberries)<br />

Super yum too!) <br />
1/4-1/2 c juice or water depending on ingredients. (The little cans of pineapple juice are a cheap and yummy way add pineapple to a morning smoothie, especially one that might have onion etc in it, orange juice is great too)<br />
Puree the heck out of all the above ingredients. Even the kids will love it! Makes over 4 c at our house which is enough for the 3 kiddos and me and the hubs.<br />

The real beauty of this is how flexible it is. Don’t have frozen fruit? Add ice and a half can of peaches, or some leftover strawberries. No leftover salad? Try with handfuls of spinach, spinach and kale, even spinach and raw zucchini or squash. The key is the banana, and in my opinion the yogurt. You can use a little milk if that is all you have, make sure you use juice for the sweetner if you do though. The frozen fruit or ice goes a long way to chill and help with palatability. 2 14 oz cans chicken broth or 3 c water and 2 heaping tsp chicken bouillon<br />
1 scallion finely chopped<br />
2 cloves garlic peeled and popped (use your knife and press the blade horizontally with your palm to “pop” the garlic without cutting it up)<br />
3 tbsp pine nuts sauteed till lightly browned and fragrant<br />
2-3 large handfuls washed and finely chopped spinach<br />
1 large handful cherry tomatoes halved or left in tact if small<br />
olive oil and butter to coat the pan<br />
parmesan cheese and fresh cracked pepper to top<br />

Bring the broth or water and bouillon to boil (you may only need about 3c. of the cans, reserve extra or set aside incase more needed for orzo) Add orzo and follow directions on package for cooking times.<br />
Meanwhile, brown your pine nuts. Set aside. Bring olive oil and butter to melt and lightly bubble in a 12 inch or larger saute pan. Add diced scallions and garlic cloves. Cook for 1-2 minutes till lightly browned. Add cherry tomatoes. Saute a little longer with spinach till wilted. Remove from heat, add orzo when done...(if there is too much extra broth, drain it. Otherwise a little wet adds to the “sauce” in the dish) Stir slightly to incorporate vegg. Add pine nuts, Serve with fresh cracked pepper and a little parmesan cheese if desired.
